Notes on Production
Soil is clay andlimestone. Biodynamic method including slow and natural fermentation, and raising the wine on lees. Aged 1-3 years.
Tasting Notes
Rich, fresh and complex aroma of linden flowers. Ideal with fatty meats or charcuterie: the fat will be pleasantly balanced by the good acidity and the structure of the wine. Should be served 10-12ºC. This is a vin de garde (for ageing) which needs time(one to three years) in a wine cellar.
