Notes on Production
Press without macerating. Fermenting with natural yeasts from the grapes skins. The wine is then aged on fine lees around 12 monthes (4 monthes without casks filling) before bottling.
Tasting Notes
At nose, this natural white Non-Ouillé dévelops spices and granny smith apples aromas and iodized mineral hint. In mouth this profile is completed by a deep salty mineral finish.
