Notes on Production
Soils: Medium-deep sandy limestone. Vatting and spontaneous fermentation, using natural yeasts. Fermentation below 24º C. Minimal intervention.
Tasting Notes
Intense cherry red colour. Notes of strawberry, blackberry, blueberry, sweet peach and cinnamon and cloves. Very ripe and round, with balanced acidity. Lingering and harmonious finish.
Serving Temperature
16-18℃
Food Pairing
Good harmony with pâte, cured pork products, red meat and stews.
