Notes on Production
The indigenous yeasts on the grapes ferment them in steel. Cold temperature stops fermentation before bottling. The second fermentation in the bottle produces light, elegant bubbles.
Tasting Notes
Straw-yellow in colour. A slight background of fine lees, so if you shake the bottle it will appear slightly veiled and richer to the taste. Rich and fresh flavour. Fruity with nuances of bread crust, yeast and citrus fruits.
Food Pairing
Wine for whole meal and an excellent aperitif. Goes well with vegetarian and fish dishes.
