Notes on Production
Fermentation at 14-18º C in inox vats and finished in bottle. Dégorgement after 5 months. An old method was adopted by fermenting it only once without yeasts or sugar being added.
Tasting Notes
Salmon pink with orange reflections, long-lasting mousseux with fine perlage. Abundant red berries in a wonderfully fragrant. The fruit is elegantly reserved. Mixture of juiciness and drinking flow followed by acid. Cool, elegant, and pleasant.

Food Pairing
Leaf salads with raspberry mustard dressing. Steamed broccoli with eggplant pan with herbs.
